Quick and Easy 4-Berry Crumb Pie

Filling:

  • 1 pkgs frozen berry mix (Strawberries, Blueberries, Raspberries, Blackberries)
  • ½ cup granulated sugar
  • 1½ tablespoons cornstarch

Topping:

  • ¾ cup flour
  • ½ cup sugar
  • 1/3 cup cold, unsalted butter, chopped into ½" cubes
  • ¼ cup cinnamon

Directions:

In a large pot add frozen berries and sugar. Heat until the berries are thawed and a simple syrup has formed. Add cornstarch, incorporate thoroughly and remove from heat.

While the filling mixture is cooling add the dry topping ingredients into a mixer and mix thoroughly. With the mixer on a low speed, add the butter a few pieces at a time. Gradually increase the mixer speed a little until the butter in incoporated. Finish the crumb topping mixture by hand to form nice crumbs.

When the filling mixture has cooled a little, pour into a ready-made pie shell. Pour crumb topping to cover the pie. Put in a 450° oven for 20-25 minutes, or until the crumbs just start to get dark. Remove to a wire rack to cool. Serve warm with a sprinkling of confectioner's sugar.
