Fajitas

Ingredients:

  • 3 tablespoons extra virgin olive oil
  • 1 large onion, sliced
  • 1/2 red and 1/2 yellow bell pepper, thinly sliced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano, crumbled
  • 1/4 teaspoon dried thyme, crumbled
  • 4 boneless chicken breast halves, skinned, cut into strips
    (You can also use steak or shrimp)
  • Warm flour tortillas
  • Richie's Salsa and Guacamole

Directions:

Combine olive oil and dried herbs in mixing bowl and wisk together. Pour this mixture into a baking dish or zip-lock baggie. Place chicken strips in mixture and marinate for at least 15 minutes.

While the chicken is marinating, saute the onion and peppers in a little olive oil, salt and pepper.

Cook the chicken on the grill, or on the stove in a grill pan. When done, combine chicken, onions and peppers in a warm tortilla, roll up, and plate. Use Salsa and Guacamole as a side.
