Combine olive oil and dried herbs in mixing bowl and wisk together. Pour this mixture
into a baking dish or zip-lock baggie. Place chicken strips in mixture and marinate for at
least 15 minutes.
While the chicken is marinating, saute the onion and peppers in a little olive oil,
salt and pepper.
Cook the chicken on the grill, or on the stove in a grill pan. When done, combine
chicken, onions and peppers in a warm tortilla, roll up, and plate. Use Salsa and Guacamole as a side.
